The use of thermal analysis in the development of a better understanding of frozen food stability
نویسنده
چکیده
Reactions causing deleterious changes in texture, structure and chemical composition of frozen foods occur frequently and result in a loss of quality or shelflife, Polysaccharides, e..g., guar, locust bean gum, are added to many frozen food formulations at low concentrations and are effective at stabilizing products against rapid ice crystal growth. During freezing, an unfrozen phase (UFP) containing a high concentration of dissolved solutes is formed as water is separated from solution in the form of ice. This UFP is capable of undergoing a glass transition at low temperatures. Thermal analysis techniques (DSC, TMA, DEA) have been used extensively in the determination of thermal and physical properties at subzero temperatures for a number of model systems and frozen foods and in the elucidation of mechanisms of polysaccharide action.

Effect of Fatty Acid Composition on Thermal Stability of Extra Virgin Olive Oil
Background: Fatty acids are the main compounds in edible oils. Oil thermal stability depends on the composition of fatty acids. So, this study was conducted to investigate the effect of fatty acid composition on the oxidative stability of extra virgin olive oil during heating process. Methods: Totally, eight virgin olive oil samples, including five imported oils from market place of Ma...
متن کاملAntioxidant effect of ascorbic acid on the quality of Cobia (Rachycentron canadum) fillets during frozen storage
The effect of aqueous solutions of ascorbic acid (AA) on the rancidity development in Cobia (Rachycentron canadum) fillets during frozen storage was studied. Cobia fillets were treated with ascorbic acid (AA 0.25% and AA 0.5%) then stored at -18°C up to 6 months. Rancidity development was measured by several biochemical indices including free fatty acids (FFA), peroxide value (PV), and thiobarb...
متن کاملThermal aggregation of egg white proteins as affected by saccharides
Thermal characteristics of egg white proteins (EWP) may differ in the presence of saccharides. Therefore, the influence of saccharides including carboxymethyl cellulose (CMC), pectin, sucrose and maltodextrin and heating time on physicochemical characteristics of EWP as a whole were studied. Investigation of Heat Coagulation Time (HCT), solubility, turbidity and protein secondary structure of h...

Background: Lemongrass (Cymbopogon citratus) is an aromatic herb; rich source of citric, vitamin C, and phenolic compounds used as natural antioxidant and antibacterial agents in food processing. This study aimed to evaluate the effect of lemongrass extract on the quality properties of chicken burger during frozen storage. Methods: Lemongrass extract was prepared with three levels (0.5, 1.0, a...

There is considerable interest in using nano-emulsions (NEs) as delivery systems for lipophilicbioactive ingredients. In this study, the influence of G on the properties of vitamin E (VE) enriched NEsprepared using spontaneous emulsification (SE) method, were investigated. The particle size and optical clarityof the NEs depended strongly on the co-solvent presence, absence, an...
